Colosso to Become “Swift”

(updated) From a tipster, Chef Robert Thomas is opening a bar and lounge at the previous location for Colosso, which closed late last summer. Swift is expected to open in late December/early January.

I am told Robert is from NYC, a graduate of the CIA. A quick internet search results in one mention of his name as chef for catering at Haydens Lakefront Grill. I’m assuming this is the same guy. The menu is set to be “eclectic American”. Hours will be 100:am – 2:00am, with a full menu available until 1:00am. Sounds like a nice option for that neighborhood.

    Robert Thomas worked in NYC at Picheline and Gramercy Tavern ( before Tom Colicchio was ever in the lights of Top Chef), He also worked for Papa Hayden east as Chef. Swift will defiantly be a great place to eat and drink

    fyi, you may have problems calling the place “swift” seeing that it already exists in nyc and the copyright is probably going to create problems if they ever find out.

    Nathan, there are dozens of motels named “Dew Drop Inn” and Pizzerias named “Giuseppe’s Pizza”, hair salons named “Shear Elegance” or “A Cut Above”. There are “ACME Plumbing” and “AAA Bookeeping” etc etc etc in every state. Swift will have no copyright problems.

    Opening night at Swift and we give it a thumbs up. Good service and great food. Happy Hour until 7 scores swift major points. Mac and cheese, fondue and the roasted brussel sprouts were delicious. Laid back chill atmosphere.. give them a try. We’ll be back…

    They are open 7 days till 2am, lunch on weekdays.
